On 17th December 2019, photography and art enthusiasts alike struck another gift of their Christmas list, thanks to Los Angeles-based gallerist Peter Fetterman and privately owned international auction house, Bonhams.

A Wonderful Life was New York’s Last 2019 Photography Auction

Teaming up, the collaborative effort materialized in the form of a major photography auction in New York. With interested parties gathering both in person and online to place their bids, the auction was named after an iconic Christmas film by James Stewart, entitled A Wonder Life.
Focusing on images of joy and cheer, the auction featured master prints from Fetterman’s own collection with prices which started anywhere from $1,000 to $6,000. Amongst others, the auction included images of a young and ‘hip’ Audrey Hepburn on a bike, Paul McCartney in his early Hamburg quiff years, and a retro Queen Elizabeth II sitting down with a jigsaw puzzle – not forgetting mid-performance photographs of Elvis Presley and Freddie Mercury, for the fans.
With work by Swiss-French humanist photographer, Sabine Weiss, and Berenice Abbott who is revered for her revealing shots of 1930s New York – the A Wonderful Life auction seemed to be the perfect close to another year, despite garnering an overall Buy-In rate of 50% and a total sale of $350K which was lower than the expected $564K.
While 96.88% of the lots that sold had proceeds in or above the estimated pre-sale range – the top outcome was lot 107, Edward Curtis, Canyon de Chelly (1904), which sold for 5K more than expected, reeling in a total of $13825.

Unlocking Influence and Successful Negotiations, LUXUO talks to Master Negotiator Ludovic Tendron

What led you to write a book on negotiation and influence skills? 
As a corporate lawyer, I felt I was an expert in my field, but I did not become a master negotiator because I knew a lot about contracts. Dealing with people and influencing them were still important skills to develop  Psychology plays an important role in negotiation. In pursuit of more knowledge on the matter, I embarked on a research of key factors that affect our performance in the context of negotiation, including how our brain works, our physiology, the impact of new technologies and other scientific findings that are unknown or ignored in the business world. I came across amazing things and decided to share them with others, starting with my clients.
You are French, how did you adapt your negotiation skills to an Asian environment ? What are the fundamental differences you have encountered when dealing with an Asian counterpart? 
Working with different cultures requires a global mindset. You need to be curious about other cultures and acquire a minimum knowledge of their background (e.g. history and habits). You also need to build a valuable international network. Making an effort to learn or understand foreign languages helps. That way you build bridges between your culture and that of others.
Asians have a different way of doing business. Generally speaking, trust must be gained before any contract is signed. Therefore, patience is often a virtue in Asia. Many Asian countries have not developed the same principles of fairness and equality as in the western world when is comes to business.  For example, a contract will often have less value than the trustworthy relationship you may develop. The legal system may not be efficient.  You can end up wasting a lot of time and money developing a relationship if you are not able to assess opportunities and size up people with a good level of accuracy.
Young entrepreneurs are often under pressure from the market and from their own investors / shareholders. What advice would you give the head of a start-up? 
Negotiation skills are crucial for entrepreneurs. Consequences can be as detrimental as not being able to sell your ideas/products or even losing control of your company. Some highly strategic decisions have to be made when a business is set up. It is imperative to start off on the right foot.
A good control of negative emotions (such as fear or anger) is also key. Entrepreneurs often experience pressure. Optimism can quickly give way to cash flow issues or a need for funds. New markets for products or services have to be found. It is easy to be caught in a negative spiral as an entrepreneur. Stress can easily get you overwhelmed. Your physiology and body language may end up betraying your emotional status, which gets picked up by master negotiators. Best decisions are usually made when people are positively energised. Therefore, maintaining a balance is important to remain focused, assess opportunities well and connect the dots. Controlling your body language and being well aware of your qualities and flaws should also give you an edge.
How easy to develop negotiating skills ? Aren’t these skills part of your original DNA? What advises would you give to someone who feels he has amazing ideas but is a weak negotiator? 
Master negotiators are not born, they are groomed. Some people may be more social and friendly than others, which can give them an advantage when it comes to building rapport. Others can be better listeners and be good at reading people. But these abilities wouldn’t be enough to make someone a master negotiator. Other skills have to be developed to reach this level. At the end, people can learn to be more social or listen better. For all these reasons, I don’t think you are born a master negotiator. A majority of people develop negotiation skills on the job.
You refer to both business as well as diplomacy in your book. One of your favourite historical reference is Charles Maurice de Talleyrand-Perigord known as “Talleyrand”, a French Politician at the turn of the 19th Century. What interests you in Talleyrand, why such fascination ?
I think the best negotiators reveal themselves in difficult times when they have to solve important issues. The amazing thing with Talleyrand is the longevity of his career (he lived until the age of 84 year old at a time where the life expectation rate was 40), the different political regimes he lived through and was involved in (from the times of the revolution monarchy, imperialism to the republic), the amazing network across Europe he managed to build at a time where means of communication were very basic, his human qualities  (patience, listening skills, intelligence, creativity)…For all these reasons, I consider him as one of the best negotiators France has ever had.
Donald Trump, Art of the Deal or Art of the No-Deal?
We can’t say that Donald Trump can’t negotiate. He has succeeded in developing a profitable business using negotiation skills.  However, I think that his success should also be attributed to the people he chooses to assist him (and solve the problems he can sometimes create). He is probably not the master negotiator he pretends to be. His approach of negotiation is very much win-lose. Deception is part of his strategy. He likes to negotiate with threats, throwing stones at people, etc. This is the opposite of what a wise negotiator should do. The best negotiators are those who can find leverage without using power.
Donald Trump should probably move from a competition mindset to a cooperation one.
The major idea or concept contained in your book that every business person should be looking for?
Developing self-awareness. An aptitude for introspection is an indispensable tool for a master negotiator. Yet a clear and honest self-awareness is a rare quality to possess and act upon. Those who embody honest self-awareness are usually humbler, which makes them more likeable, authentic, and, therefore, more influential. A self-aware person is better prepared to work with others.
Leaders who develop self-awareness tend to be more efficient and successful. They listen, observe what is happening around them, accept constructive criticism, and grow.  Many studies show that when you are self-aware, you are more confident, a better communicator, more creative, and more emotionally intelligent.
On a personal note, you are a champagne lover (you create the acclaimed event Singapour Fete le Champagne). Which part of Champagne is your favourite? What advise would you give to new visitors to the Champagne region ?
The Montagne de Reims situated between Reims and Épernay is my preferred region. I like villages like  Hautvilliers, where Dom Perignon first developed the champagne winemaking techniques. The hillsides there are Unesco World Heritage.
A section of the Master Key is dedicated to timeless principles, among which one has been adopted by princes and diplomats to develop rapport with others since the mists of time: sharing a good meal with a good bottle. As a true champagne lover, Winston Churchill would have been caught saying one day that “a glass of Champagne lifts the spirits, sharpens the wits, but a bottle produces the opposite effect.” It’s difficult to disagree with this wisdom.
I can only encourage people to visit the beautiful region of Champagne and some Champagne houses.  Ruinart and Pommery are probably one of the the most spectacular in Reims; and Deutz and Bollinger in Aÿ.

Established 47 years ago in response to the negative influence of a rising drug epidemic, Singapore Anti-Narcotics Association (SANA) is a registered charity focusing on both research and prevention measures, as well as, aftercare and reintegration – helping to rehabilitate ex-offenders. These services encompass working closely with each and every individual to rebuild self-esteem and create future prospects moving forward. SANA prides itself as a successfully sensitive and non-judgmental space.

SANA Hosts The Annual Charity Golf and Dinner at The Sembawang Country Club

The annual Charity Golf and Dinner, is a fund-raising event which funds SANA programs for at-risk youth, recovering individuals and their families. Some of these programs include a preventive drug education initiative for secondary school students from Uniform Groups, known as the SANA Badge Scheme, and an online confidential chat service known as Talk2SANA for other struggling youth.
Offering face-to-face counselling, ex-offenders and their family may also receive support in their recovery and reintegration through a channel known as Case Management Services. These services include but are not limited to tattoo removal, legal aid, job assistance, as well as, training and skills upgrading.
Held on September 10th at the Sembawang Country Club, this year’s Charity Golf & Dinner welcomed the esteemed West Coast GRC Member of Parliament and the Government Parliamentary Committee for Home Affairs and Law, Mr. Patrick Tay as Guest of Honor. Commencing with a Double Peoria Stableford game of golf, the event followed through with a mass dinner and prize presentation.
Gathering a total of 180 distinguished guests, recently elected SANA President Dr. Jade Kua, welcomed the crowd, reiterating the importance of community support in helping raise awareness of Singapore’s domestic drug-abuse – while two of the charity’s clients Jasmine and Stephen shared personal stories of immense pain and recovery. Their key message, that drugs take a hard-toll on the lives of its users and often result in the loss of familial ties, opportunities and time.
SANA’s efforts go beyond the glitz and glamour of charity events, on 17th July 2019, Dr. Kua hosted Senior Parliamentary Secretary, Ministry of Home Affairs and Ministry of Health, at the official opening of SANA’s Step-Up Centre @ Taman Jurong – marking a concerted effort to directly reach out to recovering ex-offenders and their families in the community. Other initiatives included the SANA ‘Rise Above’ Campaign which launched on 27th July 2019 with an aim to encourage youth advocacy through education against drug abuse.
With over 6,000 individuals benefiting from SANA’s preventive, aftercare and reintegration programs – Dr Kua gives thanks to all supporters of the organisation, stating, “Whether you support us financially or volunteer your time, you are a positive influence in the lives of our clients and the people around them.”

Old School Charm — The Blancpain Villeret Extra-Plate

As the year in watchmaking comes to a close (not quite the same as a calendar year but I digress), it becomes evident that some watches are getting a lot of attention, while others are flying under the radar. First of all, the Blancpain Villeret Extra-Plate is also known as the Villeret Ultra-Plat in French and that is the better name. This is because the watch does not have an extra base plate or something, but is instead ultra-thin – ultra plat is ultra thin in French. For this story, we will be using the reference number, 6605, for better clarity.
Given that this is the season of the sports watch, it is not surprising that Blancpain earns rave notices for its Fifty Fathoms collection, and this year, the Air Command (see #54). This means a lovely number such as reference 6605 does not get the eyeballs it deserves because Blancpain has at least as much provenance in the area of ultra-thin classic watches as it does on the sporty side of horology. Well, watch trade magazines are in this game to highlight deserving pieces like this one.
The Villeret Ultra-Plat 6605 is a timely reminder that a second hand is sometimes extraneous. It was once de rigueur for a dress watch to have no more than two hands; the idea behind this, we surmise, was that only the most boorish dinner guest or canapé devourer would need to know time right down to the second when he or she ought to be engaged in being engaging.
Blancpain characterises the restraint of this 7.39mm thick watch as “elegance and discretion” personified. The manufacture asserts that this understated 40mm watch, available only in steel and red gold, introduces a new level of slimness. It also points out that the manual-winding calibre 11A4B is based on the redoubtable calibre 1150 so it has a tradition of working well. Practically speaking, two-hand watches do cause a certain amount of anxiety that one’s watch has stopped, which is why so many contemporary dress watches run with a small second hand.

Of course, this is Blancpain so the power reserve is suitably impressive at 95 hours (listed as 100 hours in the press material). Even in 2019, this is rather cool for an ultra-thin mechanical movement. If one does grow concerned about the state of wind, one simply has to turn the watch over and take a peek at the power reserve indicator engraved on the movement itself. Yes, the watchmakers have been a little cheeky here, and we did not fail to notice… While one is looking, it will not hurt to observe the wealth of hand-finishing here.
Other details to take note of here are the distinctive double-stepped bezel and the radial stylised Roman numerals – because of course a pure dress watch has Roman numerals.

Invented by engineer Jean-Léon Reutter in 1928 and brought to market by the Grande Maison  in the 1930s, the Jaeger-LeCoultre Atmos clock is as close as one can technically (and literally) get to a perpetual motion machine – a hypothetical that can do work indefinitely without an energy source. We state this odd little tidbit because inarguably, a contraption of this nature is scientifically impossible, as it would violate the first or second law of thermodynamics; but also, we wish to underscore the ingenuity of the Grande Maison in recognising the greatness of the Jaeger-LeCoultre Atmos clock and its potential as an emblem of peerless know-how of the watchmaker’s watchmaker.

Beating the legendary Leonardo da Vinci to the punch in a manner of speaking, Neuchâtel engineer Jean-Léon Reutter created a “perpetual motion machine” of sorts, using a quirk of changing environmental conditions: The Jaeger-LeCoultre Atmos Transparente, like its forebears, is an atmospherically driven clock created with internal mechanisms powered by the energy released from materials resulting thermal expansion and contraction.

Ensconced  within crystal clear cabinet of anti-reflective glass, the Atmos Transparente clock hides an open secret: just a single degree of variation in the room temperature, and the Atmos clock captures enough power to run for two entire days. Behind a dial embellished in Art Deco-style, metallic membrane filled with ethylene chloride gas expands and contracts as ambient temperature changes: during expansion, the gas compresses a winding spring while  contraction causes the spring to relax and the repeated fluctuations wind the mainspring.

Jaeger-LeCoultre has been making Atmos clocks since the 1930s in virtually hundreds of different designs with countless dial aesthetics and case treatments, most memorably, the recent endeavour with Marc Newson. The latest Jaeger-LeCoultre Atmos Transparente clock follows in the same vein as the famed industrial designer with its pared back approach, featuring a new glass dial that sets off its twelve hour-markers particularly well with minimalist, almost dauphine-like hands, forming harmonious contrast to the rounded fullness of the dial. Theoretically, a perfectly sealed Jaeger-LeCoultre Atmos can essentially run “indefinitely” but the Grande Maison recommends 10-15 year service intervals.

The Escobar Fold 1 launches in a swarm of raunchy advertising. Created by Roberto Escobar, the brother of infamous drug lord Pablo Escobar, the smartphone features a stainless steel case brushed with a gold finish and a flexible screen with dual cameras.

Running on an android operating system, the foldable phone doubles up as a tablet, with Pablo’s monogram initials positioned prominently on its front. Launched under Escobar Inc, a general holding company founded in 1984 by the Escobar family for its assets, the phone’s campaign has since been accused of sexist imagery and received serious backlash.
With Escobar Inc’s marketing material firmly aimed at men, the company’s promotional content features photos and videos of a single handset being shared amongst lingerie-clad models, stroking the phone across their bare skin in an overtly-sexual manner. One video featured a woman entirely naked, masked in Pablo Escobar emblazoned tape which barely covered her private areas.
Sparking intense outrage online, viewers of all genders and sexual orientation took offense with Escobar Inc’s reductive marketing tactics – reiterating once again how times have changed in the 21st century where the Me Too movement, annual Women’s March and a multitude of other feminist initiatives strive for equality in every aspect of life at home, work, and in the media. With women growing increasingly vocal and men lending them their support, the world’s patience for genuinely good products being marketed like sex toys is wearing thin.
Doing absolutely nothing to convince viewers of the product’s virtues, critics describe the Escobar Fold 1’s marketing strategy as unimaginative – lacking class in a failed attempt at ‘macho-advertising’.
However, despite the unfortunate campaign, the Escobar Fold 1 is actually rather impressive. For the price of $349, the smartphone includes 128GB worth of memory space, a 16-megapixel camera, a 7.8 inch flexible AMOLED screen, dual SIM functions, a fingerprint scanner, Bluetooth 5.1, Dual-Band Wi-Fi, noise cancellation and a high definition sound system – the smartphone was built in a bid to surpass the Apple iPhone.

Professional Conduct — the 30th Anniversary of the Citizen Promaster

Product names are a big deal, although not all brands agree on conventions of course. Even in watchmaking, where the character of a watch can be an important hallmark, brands sometimes trade on nothing more than a jumble of numbers. Car brands are notorious for this, with 1-Series competing for attention with SLKs and so on and so forth. These are not without merit because you can no doubt tell what brands we are referring to in the previous example. In fact, more than one watch brand famously does this, and it has its own charms, arguably. So, when a watch collection does have a name, that name had better be a good one. On the occasion of its 30th birthday, we are coming to grips with the brilliantly named Citizen Promaster, and getting a feel for its unique attributes.
What does it take for a watch to be considered ‘professional’ anyway? All watches tell the time, with varying degrees of accuracy, and sports watches are generally built a little tougher than your typical dress watch. Certainly, high complications are too skittish and twitchy to be considered ‘professional’ so you can safely exclude those. The closest analogy here would be to Formula 1 cars, which are certainly beautifully engineered machines but not built to fight traffic or rough roads. In watchmaking terms though, these might qualify as ‘Masters’ and some watchmaking brands actually do name their watches accordingly. The idea here is that these watches have mastered some aspect of watchmaking. So, what’s the Citizen Promaster’s game then? Our humble suggestion is that this collection represents what Citizen thinks represents a level of mastery in the professional category.

The brand has a unique proposition in its Eco-Drive technology, as well as its Super Titanium and Duratect treatments – all of which bolster the reliability and toughness of its watches. Super Titanium is reportedly five times harder than steel, after the Duratect treatment, and 40% lighter. It is worth remembering that Citizen was the first watch firm to deploy titanium as a case material in 1970.
The key for collectors is that none of these elements are unique to any particular Citizen collection – you could easily pick up an Eco-Drive watch in Super Titanium in any other Citizen collection. Indeed, in my story on the 30th anniversary watches last issue (#53), I cited this collection as representative of Citizen’s ability to offer something for everyone. This approach might alienate some collectors, but it has proved immensely popular. Still, the Promaster has many unique qualities – so many that we had to do this extended story to try to cover it all. Collectors may want to pay special attention to the NY009 model this year, if very specific aesthetic codes are what one is after.

To begin with, actually we are not trying to cover it all here. This story gets into the three anniversary models and one more: Eco-Drive Satellite Wave GPS Promaster 30th Anniversary, Eco-Drive Altichron Promaster 30th Anniversary, Eco-Drive Aqualand 200m Promaster 30th Anniversary, and the NY009 SEA Limited Edition (pictured right). You might think that is a lot of watches for one story, but the advantage Citizen has is that the watches speak for themselves. The sidebars spell out important bits about the individual watches.
Objectively then, you might wonder how the watches stack up. The short answer is very well, especially when you consider the value proposition, as reported by Hodinkee, to cite just one example. An important reason for this is that you are not paying for the grand history of noted explorers. As a wholly contemporary collection, it isn’t surprising that the Promaster collection has been consistent and forward-looking. Should you get one? Hells to the yeah!

Save The Beyond

Citizen is running a campaign called “Save the Beyond” (#SavetheBEYOND) along with the History Channel to celebrate the work of sustainability heroes. It profiles adventurers, explorers and eco-warriors, following them to the frontlines of climate change. For its part, Citizen thinks that learning about the activities of these professionals is “one small step towards a better future.” The company says it wants the example of these professionals, including the likes of Eric Larsen and Nathan Cook, to serve as a call-to-action for the rest of us. Alongside this, Citizen was running a campaign where one could win a trip to the Antarctic with polar adventurer Larsen. It is currently running a campaign encouraging the world to share eco-stories, with one person every month selected to win a series production Promaster Alticron. This campaign runs till December this year.

Citizen Eco-Drive Satellite Wave GPS Promaster 30th Anniversary

This 47mm behemoth is super light, thanks to the Super Titanium case and bracelet. It exhibits a high degree of hardness as a result of its Duratect MRK and Duratect DLC treatments. As a pilot’s watch, it is distinguished by a bezel bearing aviation markings such as ground-air visual signal codes. Adding to the aviation feel is the cockpit-inspired dial, making it look very much like Citizen equipped a cockpit instrument with a bracelet. Its Eco-Drive is solar-powered, and regulated by GPS signals, making short work of tracking time in 39 cities, as well enabling easy switching from local time to home time, and back again. The functions are completed by a chronograph, tracking elapsed time for up to 24 hours. Limited 1,989 pieces, the caseback is stamped with the 30th anniversary logo.

Citizen Eco-Drive Altrichron Promaster 30th Anniversary

This 46mm Super Titanium watch sports an all-new Duratect MRK Gold treatment, and is water resistant to 200 metres, despite being made for mountaineers, ostensibly. Like the Aqualand model, what makes this watch special is the analogue altimeter, which goes all the way up to 10,000 metres while also going deep – down to -300 metres. It also displays orientation information at a glance. The watch actually uses just three hands and a sub-dial to deliver a lot information. The use of different colours for the hands keeps things easy to read. Like the Satellite Wave GPS watch, this one is limited to 1,989 pieces, with the anniversary logo on the caseback.

Citizen Eco-Drive Aqualand 200m Promaster 30th Anniversary

An ISO-compliant diver’s watch, this 46.1mm steel model is water-resistant to 200 metres. What distinguishes the Promaster Aqualand is the analogue depth gauge, which displays depths down to 70 metres – a depth that far exceeds what recreational divers will ever need. It is indeed a great comfort when one’s tools are able to perform at a far higher level than one’s own skill level. While not quite at the level of the Promaster Professional Diver, the Aqualand does pack quite the functional punch. This includes a rapid ascent alarm, power reserve indicator, a sensor to indicate any leaks, and the usual unidirectional bezel. Limited to 6,000 pieces, the caseback is also stamped with the 30th anniversary logo.

An update of the NY008, which was equipped with a rubber strap, this version has a matching steel bracelet (the 42mm case remains in stainless steel). For Southeast Asia, the limited edition is the NY0099-81X, distinguished by its green dial and matching green bezel. The automatic calibre 8203 in service here provides 40 hours of power reserve. Another particularity setting this model apart is the use of black numerals and characters against a white background in the day-date window. If these are not details to draw in the prospective collector, we don’t know what are! This edition is also limited to 1,989 pieces. Quorn and Chef Sam Leong’s Yuletide Feast Promises You a Merry Good Meal

Marrying sustainability and Christmas tradition with a charming Singaporean twist, Quorn in conjunction with Michelin star restaurant founder, Chef Sam Leong have curated three simple yet enticingly celebratory recipes sure to WOW any crowd this season.
Established over 35 years ago, this meat-free brand originates from the United Kingdom and has since spread internationally, with presence in the United States, Netherlands, Ireland, Sweden, Switzerland, Belgium, Thailand, the Philippines and as of 2017, Singapore too.
Standing at the forefront of the global meat-free movement, Quorn is not just healthier, it’s sustainable too! 100% free from genetically modified organisms (GMO) and other carcinogenic ingredients, Quorn is derived from a source known as Mycoprotein which as the name suggests, is not only high in protein and fibre but low in saturated fat and contains zero cholesterol. Mycoprotein is also not an additive and is a brilliant aid in promoting both resting and post-exercise muscle growth.
Discovered in Buckinghamshire, UK, Mycoprotein is also known as Fusarium Venenatum – a fungi which when fermented creates an authentic meat-like texture with unique and nutritious properties. Quorn and Chef Leong’s Yuletide Feast menu indicates portions for up to five people and can be altered in accordance to personal preference. The menu also features appetizers and main courses in the form of salad, soup and burgers.
The recipes are as follows:
Yuletide Harvest Salad
Ingredients:
1 pack of cut Quorn sausages
½ cup of battered flour mixed with water
2 cups of thinly sliced Red and Green apples
¼ cup of sliced carrots
½ cup of pomegranate
1 tablespoon of sliced mint leaves
1 tablespoon of finely chopped ginger
Thai chili sauce
Preparation:
– Dip the cut Quorn sausages into the battered flour and fry in hot oil until brown. Set the sausages aside.
– Mix the remaining ingredients into a salad bowl and add Thai chili sauce. Mix the ingredients by tossing lightly.
– Serve the fried Quorn sausages separately or incorporate them as salad toppings.
*Optional: You may also consider including a cheese or potato basket for aesthetic purposes.
Pumpkin Navidad
Mousse Ingredients:
10g of fishless Quorn fingers
5 pieces of chopped water chestnuts
50g of chopped coriander stems
2 pieces of egg white
Soup Seasoning:
500ml of chicken consommé
250g of yellow pumpkin
½ a teaspoon of salt
3 teaspoons of vegetable oil
2 teaspoons of Hua Tiew Chiew Chinese wine
50g of coriander stems
A dash of corn starch solution
Garnish:
Steamed and uncut yellow pumpkin
Chopped chestnuts
Spring onion
Chopped crispy shallot
Mousse Preparation:
– Set aside the egg whites once they’ve foamed.
– Blend the fishless Quorn fingers till it’s a consistent paste. Mix the water chestnuts and coriander stem into the paste.
– Add the egg white foam into the paste and mix well. Scoop the paste into miniature balls and set aside.
– Peel the yellow pumpkin skin and remove its seeds. Cut the pumpkin into small pieces and steam for 20 minutes. Once it’s soft, immediately blend into a puree and set aside.
– Boil the chicken stock and carefully add oil, salt and Chinese wine. Taste periodically and season whenever necessary.
– Thicken the soup with the corn starch solution and add the yellow pumpkin puree and coriander stems.
– Pour the soup into the whole pumpkin and garnish with chestnuts, spring onion and crispy shallot.
Stack the Halls Burger
Ingredients:
5 pieces of meat-free burgers
100g of shredded button mushrooms
100g of shredded shitake mushrooms
100g of hon-shimeiji mushrooms
10 pieces of poached white and green asparagus
Seasoning:
320ml of water
75ml of maggi seasoning
70g of black pepper powder
600ml of tomato ketchup
70ml of HP sauce
100g of sugar
160g of unsalted butter
Garnish:
Crispy buns
White sesame seeds
Micro-vegetables
Preparation:
– Boil all of the seasoning ingredients before storing in the fridge.
– Sauté the mushrooms with a bit of oil and salt before setting it aside.
– Pan-sear the meat-free burger with oil until it’s hot and add 5 tablespoons of home-made black pepper sauce. Toss well.
– Lay the meat-free burger on the plate, top it with assorted mushroom and asparagus.
– Garnish with the crispy bun, white sesame seed and micro-vegetables.

First venturing out into the work of fine spirits in 2017, Virginia Black Whiskey was branded as the perfect combination of exceptionally good bourbon “juice” boxed in exquisite packaging at an accessible price. With a vision to redefine traditional whiskey, the label garnered awards from Wally’s Wine and Wine Enthusiast for its rich, decadent and smooth taste.
Since then, his latest line entitled Mod Sélection is a collaborative effort with wine and spirits industry stalwart, Brent Hocking. Having worked together in the past on Virginia Black, the duo’s latest highly sought after commodity dates as far back as 1892 and was born from fifth-generation champagne makers in Vallée de la Marne, France.
Marking the first time this champagne has ever been made available to the public, Mod Sélection aims to be “the purest expression of balance and terroir ever produced” with “time-honored tradition, elegant modernity and impeccable taste”.
Housed in one-of-a-kind regal bottles embossed with golden brown handcrafted embellishments, Mod Sélection comes in Réserve and Rosé for an estimated USD$300 and USD$400 per 750ml, respectively.
Characterized by its deep-salmon hue, the Rosé incorporates red fruit such as strawberry, blood orange and plum, as well as, honey, ginger and sweet spice.
Other alternatives include the bubbly Réserve Vintage 2008, worth USD$480 and the Réserve Rosé Vintage 2008 which includes orange peel, dried apricot, pineapple, brioche, nutmeg and clove – worth USD$550.
While Drake has expressed desire to continue working closely with the beverage industry, he isn’t the only celebrity with their foot firmly in the door. The much awaited opening of FIVE GUYS Singapore is finally here! Originating from Washington, D.C. in 1986, this family owned business runs on a simple concept to create a space where “fresh, juicy burgers with all the toppings you could stuff between fresh-baked buns” exist.
